食品企业必须首先遵守GMP的规定,然后建立并有效实施SSOP,GMP、SSOP是相互依赖的,是制定和实施HACCP计划的基础和前提条件,HACCP是建立在GMP和SSOP的基础之上,ISO9001HACCP是相互兼容的。

HACCP(Hazard Analysis and Critical Control Point)——危害分析与关键控制点,把三种食品危害(生物性、化学性、物理性)作为控制目标。是指导食品企业建立食品安全管理体系的基本原则,以HACCP为基础的食品安全管理体系,被称为HACCP管理体系。食品法典委员会(CAC)所确认的HACCP共有7个原理(具体见第“四”条的描述)。
